WHY IS THE BIRCH WATER NOT FLOWING?

Too early or too late :

If the birch water isn’t flowing, it means that the production period hasn’t yet begun and the raw sap has not yet risen up. Indeed, the harvest period falls around the end of winter, just before spring and the appearance of new leaves, when the water starts to rise up from the ground, absorbed by the roots. After the leaves appear, the sap continues to flow but it develops a bitter taste making it unpleasant to drink.
