So you’ve bought all your equipment and you are raring to go...how do you know when to harvest your birch water?
The birch water harvest season:
Before the buds open at the end of winter is the right time to harvest birch water. Indeed, this is when the roots are absorbing the water and minerals contained in the soil and the sap starts to rise up inside the tree.
The harvesting period lasts around one month, usually around March.
